Thijs Vervloet** - Restaurant Colette|De Vijvers
Thijs Vervloet got his first taste of grande cuisine from his grandmother Colette, herself an experienced cook. He has earned his stripes in various top restaurants, notably with Joël Robuchon — the chef with the most stars in the world — in Paris, and with Viki Geunes*** in the Antwerp restaurant Zilte. Thijs Vervloet has just been rewarded with his 2nd Michelin star. His restaurant Colette welcomes you in a sublime setting at the ponds of Averbode, the former property of the princely family de Merode, where his great-grandmother was a home cook! Vervloet’s cuisine is classic and prestigious with a modern twist, inspired by the chef's trips to London, Paris and New York.
Carl Gillain - La Table du Royal Snail
Carl Gillain is best known for his 2011 participation in the culinary TV show 'Top Chef', but his experience goes far beyond that. He has worked alongside top chefs such as Clément Petitjean* at La Grappe d'Or, Lionel Rigolet* at Comme chez Soi, and San Hoon Degeimbre** at l'Air du Temps. In 2013, he opened his own gastronomic restaurant at the foot of the magnificent Citadel of Namur, L'Agathopède, which was converted into La Table du Royal Snail in 2020. His cuisine is young and casual, with bold and original flavours.
Khalil Mezni - Gardens Of Aromates
Talented pastry chef Khalil Mezni, who worked for 11 years with Pascal Devalkeneer** at the Chalet de la Forêt, is now working his magic under Karen Torosyan's* at the BOZAR Restaurant in Brussels. Mezni is also a consultant on sweets for top chefs and a top-level caterer at Gardens of Aromates. His desserts are refined, delicate, tasteful and — as the icing on the cake — of great beauty and elegance.
