Laure Genonceaux affirms and proudly showcases her Mauritian roots with a little nod to the Brinzelle, Mauritius' local aubergine. Her cuisine is nevertheless French, and highly creative. Having previously worked at, among others, Bon Bon, Brinz’l is a kind of return to her roots for Laure, as Brinz'l is housed in the very building that Bon Bon used to be in in Uccle.
